Pictured here is hands down my favorite breakfast: morning oats. As a kid, for whatever reason, my dad gave me the nickname "Briany -oats." So this one's for you, Dad! Looks like I lived up to the name!
Trust me, I'm pretty incompetent when it comes to cooking. But this is seriously the easiest and most delicious breakfast option I've experimented with!
How I make them: pour about 1 cup of quick oats into a bowl. Add enough water to fully saturate, but not drown your oats. Cut up one banana and add to bowl. Heat in the microwave for 1 minute. Note: as you probably know, oats are not inherently sweet. Heating it in this way draws out natural sweetness and sugars from the banana and makes everything taste sooo much better! Mash it all together and add some coconut milk (or preferred nut milk) to help cool it down. From there, I add whole almonds, chia seeds, Vegan chocolate chips (you can find these at Kroger :), and fruit of your choice (I have strawberries, raspberries, and blackberries pictured here.) Top it off with some shredded coconut and bam! You've got an amazing, nutritious breakfast that'll give you tons of energy to tackle your day!
